After dark and under the red moon in a smoke-filled sky, we went to Honey Night, an annual event organized by beekeeping friends. In the cool evening, undisturbed by skeptical bees, the beekeepers collect their equipment and help each other harvest honey. I learned to use a heated knife to remove the caps from honeycomb cells. A bee that works the hardest only makes about half a teaspoon of honey in her lifetime. It is important to be efficient at this job and not to waste honey by cutting too deep. The frames are then placed in a centrifuge and rotated by hand. The honey leaves the cells and flows out. It is filtered through a cheesecloth. Then it can be poured into jars. All of this takes time and the work of many willing hands. It felt good to do so and not worry about the forest fires, the craziness in Washington, DC, and the troubled state of the world in general. When we lived in the deep south, we visited Providence Park in western Georgia, where we laughed at a sign on a nature trail that proclaimed a destroyed car an "ecosystem".
